Description

The Vianen Water Misty system can be used in any Vianen canopy and is suitable for use with all types of cooking equipment, especially where cooking activity is high and a great deal of grease is produced during cooking. The Water Misty system does not use the Vianen FECON filters but instead the air passes over a series of horizontal stainless steel grease baffles positioned to increase the air velocity and force severe changes in direction which ensures the grease is separated from the exhaust air stream.
The Water Misty system can be incorporated in canopies that also feature Make-Up air and UV-C filtration.

Construction

The VIANEN Water Mist baffles are fully welded (1.0 – 1.2mm thick) type 304 stainless steel assemblies. Grease collection channels run the full length of the canopy. Full length hinged access panels mounted with gas filled dampers and locked with captive quick release fastenings allow easy access to the plenum interior, Water Mist pipe work and spray nozzles for inspection purposes. To safeguard the operation of the system the first 3 – 4 m of extract ductwork should be watertight and a moisture eliminator mounted before the extract fan.

Operation

The exhaust air passes over the canopy baffles at high speed, the position of the baffles ensures the grease is thrown out of the air stream by centrifugal force. A fresh water mist is sprayed into the internal plenum of the canopy under controlled conditions which dictate the correct amount of water to ensure the system and airstream is cleaned. The separated grease with water runs into dedicated collection channels and then to drain. This makes sure that any necessary maintenance is kept to a minimum at minimal cost whilst at the same time providing high levels of hygiene by preventing the build up of grease which would otherwise create a fire hazard.

The ROX-20TA-U

A Better Alternative than Ozone, UV or Chlorinated Chemical

The ROX 20TA-U is safer and more cost-effective than chemical biocides, ozone or UV technologies. Electrolytic oxidizing (EO) water produced by the ROX 20TA-U is approved for direct food contact and meets regulatory requirements under 21 CFR 173.315 and 40 CFR 80.1054. ROX 20TA-U requires only water, electricity and salt.The cost per gallon of ROX water is less than 1/2 cent per gallon.
Electrolytic oxidizing water is a combination of tap water, salt, and electricity.When these elements c ombine, it produces two highly effective solutions. One solution is an acidic solution with strong fungicidal and antibacterial characteristics.This acidic solution has proven to reduce food-borne pathogens, spoilage organisms and viruses. In addition to the acidic solution, the ROX system produces a strong alkaline solution with excellent degreasing and cleaning capabilities.

Grease Shield DEFENDER

The automatic grease removal system positively removes grease and food from kitchen effluent with the addition of a FilterShield food filtration system for maximum drainage protection. The dual-removal system provides exceptionally high drainage protection by extracting and discharging the food-solids (a common source of blockage) and then the fat, oil and grease reducing the oil content in the discharge effluent to below 100 parts per million.
In addition to its high removal rate the unit is also a self-maintaining automatic separator which means the unit stays clean and odour free with no staff cleaning required.

Water Recycling System

The grease polluted water from the canopy flows through a 1” drain into a stainless steel type 304 septic tank with internal baffles. The water passes through the septic tank and is cleaned from grease and other cooking particles. A pump brings back the cleaned water through a 3/4” pipe back to the canopy and is in this way reused for the Water Misty system.
The septic tank is fitted with an easy accessible screwed lid for cleaning and maintenance. The 1” drain with valve can be used to drain the water from the system during cleaning. A 3/4” water connection with non-return valve is used to fill the septic tank with water and clean the internal part of the tank through the internal cleaning nozzles.
